Dried Meat and Gorgonzola Paninis

Ingredients for 4 people

  • 1/4 cup mayonnaise
  • 1 1/2 teaspoon lemon juice
  • 1 finely chopped garlic clove
  • 1/8 teaspoon crushed black pepper
  • 4 small ciabatta rolls
  • 8 thin slices of Farah Dried Meat
  • Crumbled blue cheese (Gorgonzola or Numidia type)
  • 1 cup lightly packed small spinach leaves
  • Marinated red onion
  • 4 slices of Gruyere or Mozzarella cheese
  • 1 tablespoon olive oil

Preparation

1. In a small bowl, mix the mayonnaise, lemon juice, garlic and pepper. Cut the rolls in half horizontally. Brush each cut side with the garlic mayonnaise. Cover the bottom of the rolls with the meat slices, Gorgonzola cheese and spinach. Garnish with red onion and Gruyere cheese slices. Cover with the top of the rolls. Brush each side of the sandwiches with oil.

2. Preheat the panini press. Put the sandwiches, two at a time, in the panini press. Close the lid and cook until the bread is lightly toasted and the cheese has melted.
